Ingredients:

• 4-5 eggs
• 1 large Potato
• 4 medium Onion (2 chopped and 2 ground)
• 1 tsp Red Chilli powder
• 2 chopped Green chillies
• 1 tsp ginger-garlic paste.
• whole Garam Masala (1 stick cinnamon, 2 cardamoms, 2 cloves) to be ground
• salt and Turmeric to taste
• 2-3 Bay Leaves
• 50g oil

Method:

  1. Break the eggs and mix them with chopped onions, a pinch of salt and 2 chopped green chillies.
  2. Cut the potato into pieces and soak it in water.
  3. Make small omelettes and keep aside.
  4. Heat the oil in kadai and fry the potatoes pieces.
  5. Put the bay leaves along with masala, except garam masala, and fry it till it leaves oil.
  6. Add salt to taste, 1 tsp turmeric powder and 1 tsp chilli powder.
  7. Add 1 cup warm water in it.
  8. After the potatoes are cooked, add in the omelettes and 1/2 cup of warm water.
  9. Keep it on low flame, add garam masala and simmer for sometime.
  10. Serve it with rice.
