Ingredients:

• 6 – Egg
• 4 – Onions
• 5 Cloves – Garlic
• Small piece – Ginger
• 5 – finely chopped Green chillies
• 1 tbsp – coriander and Cumin seed powder
• 1/2 tbsp – Red Chilli powder
• 1/4 tbsp – Turmeric powder
• 3 – medium size Tomatoes
• Chopped Coriander leaves for garnishing
• 3 tbsp – oil
• Salt to taste

Method:

  1. Boil eggs, remove the shell and keep aside
  2. Heat oil in a pan, add onions, green chillies, ginger and garlic paste. Fry onions till it turns brown
  3. Add tomatoes and fry it properly
  4. Slit the boiled eggs and put them in the pan
  5. Add red chilli powder, turmeric powder, coriander and cumin powder and salt on the eggs
  6. Stir it, cover the pan and let it cook for 15 mins
  7. Remove the lid and garnish it with chopped coriander leaves
