Ingredients:

• 6-8 – Brinjals
• 2 – Onions
• 2-3 – Green chillies
• 1/2 bunch – Coriander leaves
• 2 tbsp – roasted groundnuts
• 1 tbsp – roasted til
• 3-4 leaves – Tamarind
• 1 tsp – Garam Masala powder
• 1 tbsp – Jaggery
• 2 tbsp – fresh Coconut
• 1 tsp – Ginger Garlic paste
• Red Chilli powder
• Wet chutney
• Dry powder

Method:

  1. Make slits in the brinjal and keep aside.
  2. Make the dry powder of roasted groundnuts and roasted til, keep aside.
  3. Heat oil and then add onions, ginger garlic paste, green chillies, coconut and coriander.
  4. Cook for a while, make chutney and keep aside.
  5. Take dry powder and the chutney, add salt and mix properly. Stuff in brinjals.
  6. Heat more oil in a cooking pan and then add mustard and jeera.
  7. Take the stuffed brinjal and cook it by closing the lid tightly without putting water.
  8. Then in the remaining masala put little water and boil.
  9. Add the brinjal and cook well.
  10. Serve hot with chapattis.
