Ingredients:
• 6-8 – Brinjals
• 2 – Onions
• 2-3 – Green chillies
• 1/2 bunch – Coriander leaves
• 2 tbsp – roasted groundnuts
• 1 tbsp – roasted til
• 3-4 leaves – Tamarind
• 1 tsp – Garam Masala powder
• 1 tbsp – Jaggery
• 2 tbsp – fresh Coconut
• 1 tsp – Ginger Garlic paste
• Red Chilli powder
• Wet chutney
• Dry powder
Method:
- Make slits in the brinjal and keep aside.
- Make the dry powder of roasted groundnuts and roasted til, keep aside.
- Heat oil and then add onions, ginger garlic paste, green chillies, coconut and coriander.
- Cook for a while, make chutney and keep aside.
- Take dry powder and the chutney, add salt and mix properly. Stuff in brinjals.
- Heat more oil in a cooking pan and then add mustard and jeera.
- Take the stuffed brinjal and cook it by closing the lid tightly without putting water.
- Then in the remaining masala put little water and boil.
- Add the brinjal and cook well.
- Serve hot with chapattis.
