Ingredients:

• Hard boiled eggs – 4, shelled
• Cooked Green peas – 1 cup
• Grated Coconut – 1.5 cup
• Ginger – 1 cm piece
• Garlic – 4 flakes
• Chilli powder – 1 tsp
• Coriander powder – 2 tsp
• Cumin powder – 1 tsp
• Turmeric powder – 1/2 tsp
• Tamarind – size of a small Lime
• Oil – 3 tbsp
• Onion – 1/2 cup, finely chopped
• Coriander leaves – a small bunch-to garnish
• Salt to taste

Method:

  1. Grind the coconut, the ginger and garlic into a smooth paste
  2. Mix this with all the powders
  3. Soak the tamarind in 1/2 cup of water and extract the juice
  4. Heat oil in a pan and saute the onions until pink
  5. Add the coconut paste and fry it
  6. Now add the tamarind juice and 1.5 cups of water
  7. Bring to a boil and simmer for 5 minutes
  8. Add the green peas and eggs
  9. Add salt to taste
  10. Simmer for 5 more mins
  11. Garnish with coriander leaves
