Ingredients:

• 1/2 cup – cornmeal
• 1/2 cup – all-purpose flour
• 1 tsp – baking powder
• 1/2 tsp – baking soda
• 1/4 cup – Sugar
• 3 tbsp – grated Orange rinds
• 1/4 cup – Almond nuts, chopped coarsely
• 1/2 cup – Apple sauce
• 3 tbsp – Canola Oil

Method:

  1. Preheat the oven to 425F.
  2. Mix together quick cooking oats, cornmeal, all-purpose flour, baking powder, baking soda, sugar, grated orange rinds, apple sauce, canola oil and chopped almond nuts and knead everything to dough.
  3. Dust the dough with few spoons of all-purpose flour, roll the dough with a rolling pin to a thick disc.
  4. Cut the disc into 8 wedges, transfer the wedges to a cookie sheet, leave at least few space in between the scones.
  5. Brush the top of the scones with canola oil and bake for 20 minutes.
