Ingredients:
• 125 g – vermicelli Pasta
• 1/2 tbsp – Olive oil
• 1 small onion, chopped
• 1 Clove garlic, chopped
• 200 g – chopped Tomatoes
• 2 boneless Chicken breasts fillets, cooked and cubed
• 1 small bunch – fresh basil, chopped
• 1/2 tsp – salt
• 1/2 dried crushed Red Chillies (optional)
• 2 tbsp – freshly grated parmesan
Method:
- Cook pasta according to instructions.
- Drain, and set aside.
- Heat oil in a large frying pan, over medium-high heat.
- Saute onions and garlic.
- Stir in the tomatoes, chicken, basil, salt and chillies.
- Reduce heat and cook covered.
- Simmer for about 5 minutes, stirring frequently.
- Toss sauce with pasta to coat and heat through.
- Serve with Parmesan cheese.
