Ingredients:
• 1 – big Cauliflower
• 2 – onions, chopped
• 1/2 cup – Curd
• 1/2 cup – Almond paste
• 1 tsp – Red Chilli powder
• 1 tsp – coriander powder
• Juice of 1 Lime
• 1/2 tsp – Turmeric powder
• 1 tsp – cumin powder
• 1 tsp – Ginger paste
• 1 tsp – Garlic paste
• 1/2 tsp – Garam Masala
• 1 tbsp – chopped coriander
• A few strands Saffron
• 2 tbsp – oil (plus enough to fry)
• Salt to taste
• Cashew paste – 1 tsp
Method:
- Separate the cauliflower into florets.
- Add salt, turmeric powder and lemon juice. Mix well.
- Sprinkle gram flour and chilli powder, and mix well again.
- Deep fry.
- Once half cooked, strain the florets and keep aside.
- Sprinkle garam masala over it.
- For gravy:
- Heat oil, add chopped onions and fry till light brown.
- Sprinkle garam masala and mix well.
- Add ginger paste and garlic paste.
- Mix well, stirring continuously.
- Put turmeric, coriander powder, cumin seeds powder, red chilli powder.
- Fry the masala well.
- Add almond and cashew paste.
- Cook for 2 mins and add curd. Mix thoroughly.
- Mix fried cauliflower, salt, saffron, green coriander, sprinkle water, cover and cook on low flame.
- Serve hot with chapattis, parotas, puris.
