Ingredients:
• 1 cup – Wheat flour
• 1 cup – Rice flour
• 1 cup – Gram flour
• 1 cup – Corn flour
• 1 cup – Cabbage (Finely chopped)
• 2 cups – Curds (Well beaten with water, added to make buttermilk)
• 1 medium Onion (Finely cut into long strips)
• 6 to 7 – Green chillies )Finely chopped)
• 2 pieces – Garlic (Crushed)
• 1/2 tsp – Turmeric
• Oil
• 1 tsp – Sugar
• Salt to taste
Method:
- Mix all flours together. Add cabbage.
- Add curds (buttermilk) to make the batter. (The batter should not be too thick or too thin).
- Add more buttermilk if needed according to the consistency of batter.
- Mix well and keep it aside for about 7 to 8 hours in a warm place.
- Before preparing the uttappam, add onion, green chillies, garlic, turmeric, sugar and salt to the batter.
- Mix it well.
- Heat a non-stick pan and grease it with a little oil.
- When the temperature is right, pour a large spoonful of the prepared batter.
- Spread it to a little thick round shape.
- Put oil on all sides of the uttappam.
- Flip once and let the other side cook well.
- Repeat for all of the remaining.
- Serve hot with green chutney, tomato ketchup or pickles.
