Ingredients:
• 4 – large Onions
• 4 Cloves – Garlic
• 3/4 cup – Chickpea flour (besan)
• 1/2 cup – flour
• 1 – Egg
• 1.5 tsp – bicarbonate of soda
• 1 tsp – chilli powder
• Salt to taste
• Vegetable oil for shallow frying
Method:
- Peel the onions and cut in half. Slice very thinly. Finely chop the garlic.
- Mix the flours with the remaining ingredients and enough water to make a smooth creamy batter.
- Add onions, garlic and mix well.
- Heat oil, about 2 cm deep, in a wide flat pan.
- Take spoonful of the batter, press into patties and add to the oil.
- Fry on both sides until golden brown and cooked through.
- Remove to a rack covered with absorbent paper to drain excess oil.
- Serve hot with chilli sauce or green coriander chutney.
