Ingredients:

• 4 – large Onions
• 4 Cloves – Garlic
• 3/4 cup – Chickpea flour (besan)
• 1/2 cup – flour
• 1 – Egg
• 1.5 tsp – bicarbonate of soda
• 1 tsp – chilli powder
• Salt to taste
• Vegetable oil for shallow frying

Method:

  1. Peel the onions and cut in half. Slice very thinly. Finely chop the garlic.
  2. Mix the flours with the remaining ingredients and enough water to make a smooth creamy batter.
  3. Add onions, garlic and mix well.
  4. Heat oil, about 2 cm deep, in a wide flat pan.
  5. Take spoonful of the batter, press into patties and add to the oil.
  6. Fry on both sides until golden brown and cooked through.
  7. Remove to a rack covered with absorbent paper to drain excess oil.
  8. Serve hot with chilli sauce or green coriander chutney.
