Ingredients:

• For Oothappam:
• 2 cups – Rava (Sooji)
• 1 cup – Rice flour
• 1/2 cup – Urad flour
• 5 – Green Chillies, finely chopped
• 1 – Onions; big, cut into very small pieces
• 1 cup – Cilantro
• 3 cups – Curd (preferably sour)
• Salt to taste
• For Cilantro Chutney:
• 2 cups – Cilantro,
• 2 tsp – Channa dal
• 5 – Red Chillies (or green)
• Salt to taste

Method:

  1. Chutney:
  2. Fry the channa dal and red chillies in two tsp of oil.
  3. Chop the cilantro, add the tamarind and roasted channa dal, salt and grind it fine.
  4. For uthappam:
  5. Make a smooth flowing batter of rava, rice and urad flour, by adding only curd.
  6. Use more curd to dilute the consistency if required.
  7. Add to it the chopped chillies and onions.
  8. Add salt as required.
  9. Spread the batter (not too thinly) on a heated tawa and add oil on the sides.
  10. Roll it over after a while and add some more oil.
  11. Once the uthappam is cooked, serve it with the hot cilantro chutney.
