Ingredients:
• For Oothappam:
• 2 cups – Rava (Sooji)
• 1 cup – Rice flour
• 1/2 cup – Urad flour
• 5 – Green Chillies, finely chopped
• 1 – Onions; big, cut into very small pieces
• 1 cup – Cilantro
• 3 cups – Curd (preferably sour)
• Salt to taste
• For Cilantro Chutney:
• 2 cups – Cilantro,
• 2 tsp – Channa dal
• 5 – Red Chillies (or green)
• Salt to taste
Method:
- Chutney:
- Fry the channa dal and red chillies in two tsp of oil.
- Chop the cilantro, add the tamarind and roasted channa dal, salt and grind it fine.
- For uthappam:
- Make a smooth flowing batter of rava, rice and urad flour, by adding only curd.
- Use more curd to dilute the consistency if required.
- Add to it the chopped chillies and onions.
- Add salt as required.
- Spread the batter (not too thinly) on a heated tawa and add oil on the sides.
- Roll it over after a while and add some more oil.
- Once the uthappam is cooked, serve it with the hot cilantro chutney.
