Ingredients:
• 2 cups – Whole Wheat pasta, cooked according to the packet
• 1 cup – Roasted peanuts, skinned and ground
• 1 cup – Mixed veggies, chopped small ( carrots, cauliflower, peas, Corn )
• 5 – Tomatoes, pureed
• 5-6 – Cloves of garlic, minced
• 1 tsp – Oil
• 2 tsp – Cream
• 2 tsp – Salt
• 2 tsp -Oregano
• 2 tsp – Black pepper
• 2 – Green chillies, chopped fine
• 1 tsp – Green Basil pesto
• 2 tsp – Grated cheese
Method:
- Heat oil in a pan and add minced garlic and green chillies, fry for a minute.
- Add tomato puree and salt, cook covered for 3-4 minutes until it turns thick.
- Meanwhile, steam or boil the vegetables till they are a little tender but not mushy.
- Add them to the tomato sauce, stir well and cook covered for 4-5 minutes.
- Keep stirring in between.
- Add pesto and spices, cook for another 2-3 minutes.
- Now, add roasted peanut powder to this and keep stirring for 2 minutes.
- Add pasta and cream, mix well.
- Drizzle some cheese over the top before serving.
