Ingredients:
• 1 lb packet – peas.
• For seasoning: 10-12 – cashews.
• 1/2 tsp – mustard seeds.
• 1/2 tsp – cumin.
• Curry leaves.
• 1/4 tsp -turmeric.
• 2 tsps – cooking oil.
• Grind to a fine paste:
• 1/2 cup – sesame.
• 4-5 – Red Chilli pods.
• 1 tsp – cumin.
• 1 tsp – Rice flour (or 2 tsps – soaked Rice).
• 1/2 cup – water.
• Tofu scramble:
• 1 packet – hard tofu.
• 6 – green chillies.
• 1/2 tsp – cumin seeds.
• 1/2 tsp – Red Chilli powder.
• 1/4 tsp – turmeric.
• 3-4 – tsps cooking oil.
• 2 – onions, cut into small pieces.
Method:
- In a pan, heat 2 tsps of cooking oil. Add the seasonings.
- When the seeds pop, add the peas and fry for a few minutes.
- Now, add 2 cups of water and bring it to boil.
- Once the peas are tender, add the ground paste.
- Add salt to taste. Bring it to boil.
- Top it with 1 tsp ghee.
- For tofu scramble:
- Wash the tofu in running water for 4-5 minutes. Squeeze excess water off.
- Crumble the tofu into a pan and saute it without any oil till the raw smell of tofu disappears. Set it aside.
- Heat 3-4 tsp cooking oil in the pan. Add cumin.
- Once the cumin is sizzling hot, add the onions, and green chillies. Fry for 5 minutes.
- Now add the scrambled tofu and fry for 4-5 minutes.
- Add red chilli powder and salt to taste.
