Ingredients:

• 2.5 cups – yellow moong dal or red masoor dal (washed and soaked for about 30 to 40 minutes)
• 5 cups – vegetable or Chicken or Meat stock
• 3 tbsp – Olive oil
• 1 – large Onion (finely chopped)
• 1 – Celery stick (chopped)
• 5 – medium sized Tomatoes (peeled and roughly chopped)
• juice of a Lemon
• ½ tsp – Red Chilli powder
• salt to taste
• freshly ground pepper (as per taste)

Method:

  1. Heat oil in a heavy bottomed vessel.
  2. Add the onions and celery.
  3. Saute 1.5 till the onions become soft.
  4. Add the stock.
  5. Mix well.
  6. Add the lentils.
  7. Allow it a boil.
  8. After a boil, simmer for 20 to 25 minutes or till the lentils are soft.
  9. Add the tomatoes, salt, pepper, red chilli powder and lemon juice.
  10. Cook further on a medium flame for 8 to 10 minutes.
  11. Serve hot.
