Ingredients:
• 2.5 cups – yellow moong dal or red masoor dal (washed and soaked for about 30 to 40 minutes)
• 5 cups – vegetable or Chicken or Meat stock
• 3 tbsp – Olive oil
• 1 – large Onion (finely chopped)
• 1 – Celery stick (chopped)
• 5 – medium sized Tomatoes (peeled and roughly chopped)
• juice of a Lemon
• ½ tsp – Red Chilli powder
• salt to taste
• freshly ground pepper (as per taste)
Method:
- Heat oil in a heavy bottomed vessel.
- Add the onions and celery.
- Saute 1.5 till the onions become soft.
- Add the stock.
- Mix well.
- Add the lentils.
- Allow it a boil.
- After a boil, simmer for 20 to 25 minutes or till the lentils are soft.
- Add the tomatoes, salt, pepper, red chilli powder and lemon juice.
- Cook further on a medium flame for 8 to 10 minutes.
- Serve hot.
