Ingredients:

• 1 cup – Cooked Rice (any variety)
• 1/2 cup to 1 cup – Grated Raw Mango (depending upon the sourness of the mango)
• 3 – Green chillies
• 2/8 tsp – Turmeric powder
• Salt to taste
• For Seasoning:
• 2 tbsp – Oil
• 1/2 tsp – Mustard Seeds
• 1 tsp – Urad dhal
• 1 tsp – Channa dhal
• Cashews as required
• Peanuts as required
• 1/4 tsp – Cumin seeds
• 1/8 tsp – Asafoetida / Hing
• 3 – Red Chillies (broken)
• 1 string – Curry leaves
• Cilantro – For Garnishing

Method:

  1. Cook rice and allow it to cool.
  2. Heat oil in a pan, add red chillies, mustard seeds, and cumin and let it splutter.
  3. Add channa dhal, urad dhal, broken cashews, and peanuts, and saute it for a minute or till golden colour.
  4. Then add hing, green chillies, and curry leaves. Stir for a minute.
  5. Add turmeric powder and grated mango.
  6. Cook till mango is tender and soft, add salt and adjust taste.
  7. Turn off the heat, mix mango mixture evenly with the cooked rice.
  8. Serve with any spicy side dish.
