Ingredients:
• 2 – Medium sized Cucumbers finely chopped
• Mint chutney (made with a bunch of coriander, Green chillies and pudina/Mint leaves and very little salt and blended in a mixer with a little water)
• salt to taste
• A pinch of Red Chilli powder
• Half a Lemon
• 1 cup – Chopped Onion
• 1 cup – Chopped Tomatoes
Method:
- Wash, peel and chop the cucumbers into fine pieces.
- Add the mint chutney, chilli powder, salt and squeeze the juice of lemon over it.
- Add chopped onions and tomatoes to the base mix along with the lemon juice.
- You can have it as is or with chips, papad or khakras.
