
Ingredients:
• 1 cup – sweet Corn
• 1 – Potato (peeled and finely chopped)
• 1 – red bell pepper, chopped
• 1/4 cup – onion, chopped
• 1 – Tomato (finely chopped)
• 1.5 tsp – Red Chilli powder
• 1.5 tsp – Garam Masala
• 1/2 cup – Cashew nuts
• 1 cup – Milk (boiled)
• 1 cup – water
• 1 tsp – mustard
• 1/2 tbsp – oil
Method:
- Soak cashew in milk for at least 30 minutes.
- In a pan, heat oil, pop mustard.
- Then add onion and tomato, fry well.
- Now add potato, red bell pepper and corn.
- Add salt, red chilli powder and garam masala. Mix well.
- Add water. Bring to boil and cook till vegetables are well done.
- Grind the cashew and milk together.
- Add this to the contents in the pan.
- Once the contents thicken, remove from heat.
- Garnish with coriander.
- Serve hot with chapatti, rice, poori, etc.
