Ingredients:

• 1 cup – sweet Corn
• 1 – Potato (peeled and finely chopped)
• 1 – red bell pepper, chopped
• 1/4 cup – onion, chopped
• 1 – Tomato (finely chopped)
• 1.5 tsp – Red Chilli powder
• 1.5 tsp – Garam Masala
• 1/2 cup – Cashew nuts
• 1 cup – Milk (boiled)
• 1 cup – water
• 1 tsp – mustard
• 1/2 tbsp – oil

Method:

  1. Soak cashew in milk for at least 30 minutes.
  2. In a pan, heat oil, pop mustard.
  3. Then add onion and tomato, fry well.
  4. Now add potato, red bell pepper and corn.
  5. Add salt, red chilli powder and garam masala. Mix well.
  6. Add water. Bring to boil and cook till vegetables are well done.
  7. Grind the cashew and milk together.
  8. Add this to the contents in the pan.
  9. Once the contents thicken, remove from heat.
  10. Garnish with coriander.
  11. Serve hot with chapatti, rice, poori, etc.
