Ingredients:

• 3 cups – Watermelon chunks, deseeded
• 3 cups – muskmelon chunks, deseeded
• 3 cups – cantaloupe chunks, deseeded
• 1 tsp – ginger, finely chopped
• 1 tbsp – soft Brown sugar
• 1 cup – thick Cream
• 1 tbsp – white Vinegar
• 1 – tiny mild green chilli, chopped finely
• 1 sprig – Mint leaves, finely chopped
• 1/4 tsp – pepper, powdered
• 1/4 tsp – salt

Method:

  1. Cook ginger and brown sugar with 2 tbsp water for 2-3 mins.
  2. Cool, keep aside till required.
  3. Put all melon chunks in a large salad bowl.
  4. Pour sweetened ginger over melons, toss lightly and chill.
  5. Beat together cream, vinegar, chilli, mint, salt and pepper.
  6. Just before serving salad, pour cream mixture over it.
  7. Garnish with a few mint leaves.
