Ingredients:

• 5 large potatoes, boiled, peeled, ground to a paste
• 1 coconut, grated, ground coarsely
• 1/4 kg Sugar
• 1 cup Cream
• 1 tsp – Cardamom powder
• 6 tbsp – Ghee
• 2 tbsp castor Sugar

Method:

  1. Mix potato paste, coconut, sugar and cream.
  2. Heat 3 tbsp – ghee in a pan and add the above mixture. Stir fry till pink, adding castor sugar, cardamom powder and all the remaining ghee except 1 tsp.
  3. When the mixture becomes a ball, remove and put into a ghee-greased platter.
  4. Cool and cut into diamond shapes with a greased knife.
  5. Serve on a bed of rose petals.
