
Ingredients:
• Basmati Rice – 2 cups
• Spinach – 2 cups (finely chopped)
• Red Chillies – 5
• Coriander seeds- 2 tbsp
• Coconut -1/2 cup
• Garlic – 4 flakes
• Mustard Seeds – 1 tsp
• Urad Dal – 2 tsp
• Onion – 2 large (1 chopped lengthwise)
• Water – 3 cups
• salt to taste
• Ghee – 2 tbsp
• Coriander leaves – a few
• Cashewnuts (roasted in ghee) – a few
Method:
- Wash the rice 2 or 3 times and soak it for 15 minutes in 3 cups of water. Pressure cook the rice with a little salt.
- Grind coconut, coriander seeds, red chillies, garlic, one chopped onion and coriander leaves to a paste.
- Add 1 tbsp oil in a pan. Add mustard seeds, urad dal and fry the other chopped onion until golden brown.
- Then, add the spinach to it. Close and cook for 5 minutes.
- Once cooked, add the ground paste, chopped spinach and salt. Mix thoroughly.
- Add this to the cooked rice. Add ghee and mix well.
- Garnish with cashewnuts.
