Ingredients:

• 1 cup – semolina (Sooji, Rava)
• 1 cup – Rice flour
• 1 cup – Maida

Method:

  1. Fry sooji in a large pan over medium heat until lightly golden.
  2. Remove from heat and transfer to a mixing bowl.
  3. In the same pan, mix the flours and fry over medium heat for 5 minutes.
  4. Mix all the ingredients.
  5. Heat 1/4 cup oil until very hot, pour over the dry mixture and give it a few minutes to cool.
  6. Mix all the ingredients to form a moist soft dough.
  7. Add water if necessary.
  8. Divide the dough into small portions, roll out each portion like a thin-round bangle and deep fry in oil until golden and crispy.
