Ingredients:
• 2 cups – chopped Spinach
• 1 – Egg
• Salt as per taste
• Pepper as per taste
• 3 tbsp – chopped Spring onion
• 1 tbsp – Lemon juice
• 2 tbsp – chopped Mint
Method:
- Hard boil egg for 4 mins.
- Make small chunks of egg.
- Add to spinach.
- Toss it with remaining ingredients.
- Serve with slices of raw vegetables.
