Ingredients:

• 100 g – kidney beans (rajma)
• 1 ripe avocado, peeled and cubed
• 1 cup – tomato, deseeded and chopped
• 1/2 cup – leeks, sliced
• 1/2 cup – black olives, sliced
• 2 tsp – green chilies, minced
• 1/2 tsp – paprika
• 1/2 tsp – cumin powder
• 4 tbsp – coriander leaves, chopped
• salt and Lime juice to taste

Method:

  1. Soak beans in water overnight.
  2. Drain, add fresh water, and cook till soft with little salt.
  3. Drain and leave aside to cool.
  4. Combine rest of the ingredients together.
  5. Add the beans. Serve chilled.
