
Ingredients:
• 100 g – kidney beans (rajma)
• 1 ripe avocado, peeled and cubed
• 1 cup – tomato, deseeded and chopped
• 1/2 cup – leeks, sliced
• 1/2 cup – black olives, sliced
• 2 tsp – green chilies, minced
• 1/2 tsp – paprika
• 1/2 tsp – cumin powder
• 4 tbsp – coriander leaves, chopped
• salt and Lime juice to taste
Method:
- Soak beans in water overnight.
- Drain, add fresh water, and cook till soft with little salt.
- Drain and leave aside to cool.
- Combine rest of the ingredients together.
- Add the beans. Serve chilled.
