Ingredients:
• 3 – Chicken thigh, fillets
• 1 – fresh pineapple, peeled
• 1 – red pepper
• 1 – green pepper
• 1 tbsp – Mint leaves
• 1 tbsp – Honey
• 1 tbsp – oil
• 1 tbsp – Lemon juice
Method:
- Cut the chicken, halve the pineapple and the peppers into 3 cm pieces.
- Thread the chicken, pineapple and pepper onto skewers.
- Blend or process remaining pineapple, mint leaves, honey, oil and lemon juice, until smooth.
- Brush some of the pineapple mixture over kebabs.
- Barbeque until chicken is cooked through.
- Serve pineapple mixture as a sauce.
