
Ingredients:
• 4 – potatoes, large
• 1 – green chilli, chopped
• 1 tsp – garlic, finely chopped
• 1/2 tsp – Mint leaves, finely chopped (optional)
• 3 tsp – coriander leaves, finely chopped
• 1/2 tsp – Turmeric powder
• 1 tsp – chilli powder
• 1/2 tsp – coriander powder
• 1/2 tsp – cumin powder
• 1.5 tsp – Lemon juice
• Salt to taste
• 4 tbsp – oil
Method:
- Peel and chop potatoes into thin pieces. Soak them in the water as soon as you chop them.
- Heat oil in a skillet or heavy saucepan. Add chopped garlic and chilli, stir fry for half a minute.
- Add potatoes and salt, stir fry for 5 minutes. Stir often so that potatoes are cooked evenly.
- Add turmeric, chilli powder, coriander, cumin powder, and lemon juice and stir well.
- Add mint and coriander leaves and stir gently. Cook for 2 to 3 minutes or till oil separates.
- Garnish with freshly grated coconut.
- Serve hot with puris, rotis, bread or curd rice.
