
Ingredients:
• 125 g – cheddar cheese
• 125 g – Butter
• 1 cup – plain flour
• 2 tbsp – self raising flour
• 2 tbsp – grated parmesan cheese
• 1 tbsp – Lemon juice
• 1/2 tsp – salt
• 1/2 tsp – cayenne
Method:
- Sift and pour the ingredients into a bowl. Rub in the butter and grated parmesan cheese.
- Knead into into a soft dough, adding lemon juice.
- Shape the mixture into a roll 38 cm long and wrap in a greaseproof paper and then in aluminium foil. Refrigerate for at least three hours.
- Cut the roll into slices half inch thick and place on a greased oven tray.
- Bake in a moderately hot oven for 15 minutes until light golden brown. Cool on trays.
