Ingredients:

• 350g – Chicken breast, diced
• 25g – straw mushrooms, chopped
• 2 small green chillies, sliced in rings
• 2 spring onions, chopped
• 2 tbsp – Olive oil
• 1 Clove – garlic, chopped
• 4 cups – water
• 2 tbsp – Lime juice
• 1 pinch – ground Ginger
• For garnishing:
• Coriander leaves

Method:

  1. Heat the oil in a saucepan or wok and fry the garlic until soft but not brown.
  2. Add the chicken and stir fry for 5 minutes. Cool a little.
  3. Add the water and mushrooms.
  4. Bring to a boil and simmer for 10 minutes.
  5. Add the lemon juice.
  6. Cover, and cook gently for another 10 minutes.
  7. Add the chillies, spring onions, and ginger. Remove from the heat.
  8. Sprinkle with coriander leaves before serving.
