Ingredients:

• Basmati Rice – 2 cups
• French beans – 100 gm
• Capsicum – 2 large
• Cabbage – 150 gm
• Green peas – 50 gm
• Carrot – 100 gm
• 8 large – eggs
• Salt to taste
• Pepper – 1/2 tbsp
• Chilli sauce – 1 tbsp
• Ajinomoto – optional
• Soy sauce – 1 tbsp

Method:

  1. Saute in a non-stick pan, French beans, sliced capsicum, sliced carrots, cabbage and green peas in 1 tbsp of oil. Add a little salt, pepper, chilli sauce, soy sauce and heat through and keep it aside.
  2. In another pan, pour oil and add to it beaten eggs, salt and pepper and scramble the eggs.
  3. Meanwhile wash the rice and fry it along with fried vegetables in some ghee.
  4. Add 4 cups of water and cook on medium flame until the rice is almost cooked.
  5. Add the fried egg into the rice and stir it with a fork and wait till all the water is drained.
  6. Bake the rice in the oven at 350 degree Fahrenheit for about 10 mins and garnish with coriander leaves and serve.
