Ingredients:
• Basmati Rice – 2 cups
• French beans – 100 gm
• Capsicum – 2 large
• Cabbage – 150 gm
• Green peas – 50 gm
• Carrot – 100 gm
• 8 large – eggs
• Salt to taste
• Pepper – 1/2 tbsp
• Chilli sauce – 1 tbsp
• Ajinomoto – optional
• Soy sauce – 1 tbsp
Method:
- Saute in a non-stick pan, French beans, sliced capsicum, sliced carrots, cabbage and green peas in 1 tbsp of oil. Add a little salt, pepper, chilli sauce, soy sauce and heat through and keep it aside.
- In another pan, pour oil and add to it beaten eggs, salt and pepper and scramble the eggs.
- Meanwhile wash the rice and fry it along with fried vegetables in some ghee.
- Add 4 cups of water and cook on medium flame until the rice is almost cooked.
- Add the fried egg into the rice and stir it with a fork and wait till all the water is drained.
- Bake the rice in the oven at 350 degree Fahrenheit for about 10 mins and garnish with coriander leaves and serve.
