Ingredients:
• 2 cups – peeled chopped Peaches
• 2 cups – plain flour
• 1/2 cup – Brown sugar
• 1 – Lemon juice extracted
• 2 to 3 pinches – Nutmeg powder
• 60 gm – Unsalted butter, chilled
• pinch of salt
Method:
- Heat peaches and sugar together. Simmer till all liquid is thickened and evaporated.
- Sprinkle nutmeg and add lemon juice.
- Stir and keep aside to cool.
- Sift flour and salt. Cut in cold butter.
- Rub very lightly with fingers to form breadcrumb like texture.
- Keep aside 1/3 of mixture.
- To remaining mixture, add 2-3 tbsp. chilled water.
- Knead into a stiff dough, without too much handling.
- Roll and spread into a greased 6 inch baking dish.
- Prick all over with fork, bake blind for 8-9 minutes at 160 degree C in preheated oven.
- Pour in peach mixture and spread all over base.
- Sprinkle crumb like dough all over peach mixture.
- Bake for 5-7 minutes further, at 180 degree C.
- Serve cut slices warm as is or with vanilla ice-cream.
