Ingredients:
• 3 medium Cucumbers
• 2 medium Carrots
• 1/2 cup – sweet Corn
• 1/2 cup – Green peas
• 4 chopped Green chillies
• 1 medium Capsicum
• 2 medium Tomatoes
• 3 tbsp – Cashew nut powder
• 2 tbsp – coconut, grated
• 1/2 tsp – Mustard Seeds
• 1/2 tsp – Sugar
• 1 tsp – Raisin
• 1 tbsp – Lemon juice
• a few Curry leaves
• 3 tbsp – refined oil
• salt to taste
Method:
- Peel and halve cucumber lengthwise and deseed.
- Cut off a thin slice from under each half so the cucumber can be placed flat.
- Heat oil in a pan.
- Add mustard seeds, curry leaves, and grated coconut.
- Add chopped carrots, chillies, peas, sweet corn, cashew nut powder, raisins, and salt.
- Cook for 8 to 10 minutes over a low flame till the vegetables are tender.
- Add sugar and stir for a minute.
- Remove from heat. Add lemon juice and mix well.
- Fill cucumber boats with the mixture.
- Decorate with sliced tomatoes and capsicum.
