
Ingredients:
• 1 (4 pounds) – frozen whole boneless turkey, thawed as package directs
• 8 to 10 – large Cloves Garlic
• 3 tbsp – Rosemary
• 1 tsp – paprika
• 1 tbsp – coarsely ground black pepper
• 1 tsp – coarse kosher style salt
• 2 tbsp – Olive oil
• For Butcher1/2s String:
• Rosemary sprigs, for garnish, optional
• Orange slices for garnish
Method:
- After thawing turkey, remove from packaging, rinse and pat dry.
- Lay it out as flat as possible on a cutting board, skin side down.
- Take a rolling pin and roll over the turkey breast 3 or 4 times.
- Combine garlic, rosemary, pepper and salt in bowl of food processor and blend.
- Add oil, processing until coarsely chopped.
- Spread half the garlic mixture over the inside of the turkey. Roll turkey up (but do not tie).
- Spread outside of turkey roll with remaining garlic mixture.
- Wrap firmly in microwave plastic.
- Secure firmly with 4 or 5 pieces of Butchers String.
- Pierce firmly in two or three places with fork.
- Place on microwave safe cooking rack over a microwave safe roasting pan.
- Microwave on high power for 10 mins.
- Turn roast over.
- Microwave on medium power for 35 to 40 mins, turning 2 or 3 times, while cooking.
- Until internal temperature is 170 degrees in several places.
- Remove from oven.
- Let it stand, covered, 15 mins.
- Cut thin turkey slices to serve. Garnish with orange and rosemary.
- (Thicken pan juices for gravy, if desired).
