Ingredients:

• 250 g – gooseberries (amla)
• 1 – small, Raw Mango
• 2 tbsp – Mustard Seeds
• 1 tbsp – chilli powder
• 1 tsp – Turmeric powder
• 1/2 tsp – asafetida powder
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Saunf (fennelseeds)
• 1/4 cup – salt

Method:

  1. Slice gooseberries, remove segments and discard stones.
  2. Add half the salt and keep aside.
  3. Grate mango, add salt, turmeric and keep aside for 1 hour.
  4. Drain out water from mango and save it for later use.
  5. Crush mustard seeds coarsely.
  6. Add all other masala and grind them with mustard seeds.
  7. Add water drained from the mango and blend to make a paste.
  8. Drain out water from gooseberries.
  9. In a large bowl, mix masala paste and gooseberries.
  10. Transfer to a wide glass jar and keep aside for 2 days.
  11. Make sure to mix frequently in between, keeping lid closed.
  12. It is now ready to serve.
