Ingredients:

• 400 gms – boiled Pasta
• 100 gms – assorted bell peppers
• 20 gms – sliced black Olives
• 1 tsp – chopped Parsley
• For the dressing:
• 50 ml – salad oil
• 50 ml – malt Vinegar
• 20 gms – chopped Garlic
• 20 gms – chopped pickled Onion
• 20 gms – chopped green Olives
• .5 tsp – Oregano
• .5 tsp – Basil
• .5 tsp – chilli flakes
• Salt and white pepper to taste
• Parsley to garnish

Method:

  1. Put pasta in a mixing bowl, add pepper and black olives.
  2. Put oil in another bowl, add vinegar and mix well, add all remaining ingredients and mix well.
  3. Pour dressing on the pasta and toss well.
  4. Serve in a platter and garnish with chopped parsley.
