Ingredients:

• 300 gms – Rice (basmati).
• 600 gms – Prawns (shelled).
• 2 nos bay leaf.
• 1/4 cup – sliced onion.
• 1 tbsp – coriander leaves.
• 1 tbsp – fresh grated Coconut .
• 50 mls – Coconut Milk .
• 1 tsp – Lemon juice .
• 1/2 tsp – Turmeric powder.
• 2 nos – green chilli.
• 1 tsp – whole Garam Masala .
• 2 tbsps – ghee/oil .
• salt as per taste.

Method:

  1. Pick, wash and soak rice for about 20 minutes. Drain and keep aside.
  2. Shell, de-vein and wash the prawns.
  3. Heat ghee or oil in a thick-bottom pan.
  4. Add bay leaves and garam masala. Let it crackle.
  5. Add sliced onion, saute till the onion turns pink.
  6. Add water, turmeric powder, lemon juice and green chillies slit into two.
  7. Bring it to boil and add rice.
  8. Cook for a minute, add prawns and coconut milk.
  9. Season with salt. Stir lightly.
  10. Stir till rice absorbs all the water and then cover it with a lid, cook it on a slow fire till rice and prawns are fully cooked.
