Ingredients:
• cooked Chicken breast, chopped into 2 cm pieces – 1 cup
• soy oil – 1 tbsp
• garlic, minced – 2 tsp
• ginger, minced – 2 tsp
• chili flakes – 1 tsp
• onion, chopped – ½ cup
• green capsicum, chopped – ½ cup
• red capsicum, chopped – ½ cup
• bok choy, chopped – 1 cup
• button or straw mushrooms, sliced – 1 cup
• silken tofu, diced – ½ cup
• Tamarind pulp – 2 tbsp
• palm Sugar – 1 tbsp
Method:
- Heat oil, fry garlic and ginger till fragrant.
- Add chili flakes, fry for few seconds.
- Add all the vegetables.
- Sprinkle with a little water.
- Cover and cook till they are softened.
- Add chicken, tofu and rest of the ingredients.
- Simmer for 2 minutes.
- Taste and correct the seasoning.
- Serve hot with boiled noodles.
