
Ingredients:
• 250 gm – french /green beans, chopped
• 3 – potatoes, cubed or cut lengthwise
• 2 – tomatoes, chopped
• 4-5 – Garlic cloves, chopped
• 2 tsp – ginger, grated
• 4 – green chillies, chopped
• 1 pinch – asefetida
• 1 tsp – Cumin seeds
• 1 tsp – coriander powder
• 1 tsp – Garam Masala
• 1/2 tsp – Turmeric powder
• 1/2 tsp – red chilly powder
• salt o taste
• vegetable oil for frying
Method:
- Heat oil in a wok, fry the potato cubes till it becomes golden brown from both sides.
- Drain on paper towel and set it aside.
- Remove all the oil from wok remaining around 3 tbsp, add asafoetida and cumin seeds.
- Saute for a minute.
- Add ginger and garlic, stir for 2 minutes.
- Add all spices and salt followed by chopped tomatoes and chillies.
- Mix well and cook for 2 minutes.
- Add chopped beans, stir and cook for 7-10 minutes on low heat, stirring frequently.
- Do not add any water.
- Add fried potatoes and mix well.
- Cook for 2 more minutes.
- Remove from heat and serve hot with chapatti.
