
Ingredients:
• 1 cup – Ragi flour
• 3/4 cup – Jaggery
• 2 – eggs
• 5 tbsp – Oil
• 1/4 cup – Cashewnut cut into small pieces
• 1 tsp – Baking powder
• 1/2 tsp – Baking soda
• 2- Ripe Bananas
Method:
- Make jaggery syrup with 1/4 cup water. Allow it to cool.
- De-seed the dates and soak the dates in jaggery syrup overnight or for 6 hours.
- Beat eggs, oil, banana and jaggery with dates.
- Sieve the Ragi with baking powder and baking soda.
- Dust the nuts with little flour.
- Mix dry and wet ingredients.
- Pre-heat the oven at 180 degrees centigrade.
- Bake the cake at 180 degree C for 30 to 40 mins. If think cake is very dry, soak with orange juice.
