Ingredients:

• 2 – Halibut steaks (1 pound each – 3/4-inch thick)
• 1/4 cup – green Olive paste
• Salt and freshly ground black pepper
• Olive oil to drizzle over the top

Method:

  1. Preheat the oven to 350 F. Remove skin from steaks and the flesh away from the bone (you’ll get 4 pieces of fish from each steak – so you have 8 small fillets in all).
  2. Cut a slit on the side of each piece and stuff with some of olive paste.
  3. Lightly season the two sides of the steaks with salt and pepper.
  4. Transfer them to a baking pan, drizzle the top with olive oil and bake in a moderately hot oven for 8 to 10 minutes or until just cooked through.
