Ingredients:
• 3 cups – all-purpose flour
• 9 ounces – grated mozzarella cheese
• 2 tsp – Sugar
• 1 cup – warm water 45 degrees C)
• 1 tsp – active Dry yeast
• 1/2 cup – warm water (45 C)
• 1/2 cup – yellow cornmeal
• 2 tbsp – Olive oil
• 1/4 pound – spicy sausage – browned, drained and crumbled
• 1/4 cup – grated parmesan cheese
• 1/3 cup – diced pepperoni
• 1/4 cup – chopped Onion
• 1/8 cup – chopped green bell pepper
• 1 tsp – dry Oregano
• 3 Cloves – garlic, sliced
• 1/2 cup – Tomato sauce
• 1.5 tsp – salt
Method:
- To make pizza dough:
- Dissolve sugar in 1 cup warm water.
- In a bowl, combine yeast, 1/2 cup flour, and 1/2 cup warm water.
- Mix together and rest for 20 mins, until foamy.
- In a medium-sized bowl, mix remaining 2.5 cups flour with cornmeal and salt.
- Remove half of this mixture and stir 1 cup sugar water into the bowl.
- When mixed well, add the remaining flour mixture and mix well.
- Stir in the yeast mixture.
- Knead dough until smooth and elastic.
- Place dough in a lightly oiled bowl and cover with plastic wrap.
- The dough will rise and double.
- Pre-heat oven to 230 degree C.
- To make the stuffing:
- In a large bowl, combine sausage, mozzarella cheese, parmesan cheese, pepperoni, onion, bell pepper, oregano and garlic. Mix well.
- Take a lightly greased deep pan dish. Press half the dough on it.
- Bake it for 4 mins.
- Add the stuffing mixture on top of the crust and cover with the remaining dough.
- Seal edges together and trim excess.
- Make a slit on the top crust for steam to vent during baking.
- Spread tomato sauce on the crust.
- Bake at 230 degree C till the crust is golden brown.
- Remove from oven and cool for 5 mins.
- Cut and serve.
