Ingredients:

• Long grain Rice – 1 cup
• Tomato juice – 1 cup
• Water – 1 cup
• Peas – 1/2 cup
• Potato, cut in cubes – 1/2 cup
• Carrots diced – 1/2 cup
• Onion – 1 ( large and cut into round rings)
• Mushrooms (optional) – 1/4 cup (cut into slices )
• Broccoli – 1/2 cup (cut into florets )
• Cauliflower – 1/2 cup (cut into florets )
• Corn kernel -1/2 cup
• Cardamom (black as well as green ) – 1 tsp
• Cinnamon – 1 tsp
• Black peppers – 1 tsp
• Cloves – 1 tsp
• Dry fruits – 1/4 cup.
• 2 tbsp – ghee/butter
• Salt – to taste
• Red Chilli powder – according to taste
• Coriander or Cilantro leaves – 1/4 cup

Method:

  1. Soak the rice for 30-45 mins.
  2. In a heavy bottom pan, heat ghee and add masalas.
  3. Add onion and fry them till they turn golden brown.
  4. Add dry fruits and fry for a minute.
  5. Add all the vegetables except broccoli.
  6. Fry them for a minute or two.
  7. Add red chilli powder.
  8. Add tomato juice, rice, water and salt.
  9. Let it come to a boil, then lower down the gas and let the rice cook .
  10. Add broccoli just when rice is about to be done. After rice is almost done, cover the pan with a lid.
  11. Open after a few minutes, garnish it with coriander leaves and extra dry fruits if desired.
