Ingredients:
• 1 Cup – Sweet Corn
• 1 – Tomato, chopped
• 1-2 – Green chillies, cut lengthwise
• 1 – Onion, chopped fine
• 2 tsp – Lemon juice
• 1.5 tsp – Coriander Powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Sabji masala
• 1/2 tsp – Ginger-garlic paste
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Fennels seeds
• 2 tbsp – Oil
• 1 bunch – Cilantro/coriander, chopped
• 2.5 cups – Water
• Salt to taste
Method:
- Sputter cumin seeds and fennel seeds in oil. Add green chillies, ginger-garlic paste and onions.
- Saute till the onions turn translucent.
- Add in tomatoes, turmeric powder, coriander powder and saute.
- Once tomatoes are almost cooked, add sweet corn at this stage. Mix well.
- Now add water and cook covered on a medium flame.
- Once sweet corn is fully cooked, add sabji masala and chopped coriander leaves/cilantro, salt to taste and mix well.
- Cover and simmer for a few minutes.
- Now add lemon juice, garnish with cilantro and enjoy with flatbreads or even rice.
