Ingredients:

• 1 Cup – Sweet Corn
• 1 – Tomato, chopped
• 1-2 – Green chillies, cut lengthwise
• 1 – Onion, chopped fine
• 2 tsp – Lemon juice
• 1.5 tsp – Coriander Powder
• 1/2 tsp – Turmeric powder
• 1 tsp – Sabji masala
• 1/2 tsp – Ginger-garlic paste
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Fennels seeds
• 2 tbsp – Oil
• 1 bunch – Cilantro/coriander, chopped
• 2.5 cups – Water
• Salt to taste

Method:

  1. Sputter cumin seeds and fennel seeds in oil. Add green chillies, ginger-garlic paste and onions.
  2. Saute till the onions turn translucent.
  3. Add in tomatoes, turmeric powder, coriander powder and saute.
  4. Once tomatoes are almost cooked, add sweet corn at this stage. Mix well.
  5. Now add water and cook covered on a medium flame.
  6. Once sweet corn is fully cooked, add sabji masala and chopped coriander leaves/cilantro, salt to taste and mix well.
  7. Cover and simmer for a few minutes.
  8. Now add lemon juice, garnish with cilantro and enjoy with flatbreads or even rice.
