Ingredients:
• Rice – 2 cups
• 1 inch – Cinnamon stick
• 3 – Bay Leaves
• 5 – Cloves
• 5 – pepper Corn
• 1 – Onion
• 1 -tomato
• 1 – bunch Mint leaves
• Oil – 3 tbsp
• Cumin – 1 tbsp
• 2 – Green chillies
• Coriander for garnishing
• Lemon juice- 1/2 tbsp
• Salt as per taste.
Method:
- Cook rice with 4 cups of water in a rice cooker or pressure cooker with the whole spices. Let it cool.
- In a kadai, pour oil and add cumin and fry till brown.
- Add green chillies, onion, tomatoes and fry well.
- Then add the rice and mix well.
- Add salt, lemon juice and chopped pudina leaves. Mix well.
- Garnish with coriander and serve.
