Ingredients:
• 1/4 cup – black beans (pre-soaked and cooked till soft )
• 1/4 cup – kidney beans (pre-soaked and cooked till soft )
• 1/4 cup – Chickpeas (pre-soaked and cooked till soft )
• 1 – onion, chopped
• 1 – large potato, cubed
• 1 tbsp – ground cumin-coriander powder
• 1 tsp – Cinnamon powder
• 1 tsp – chilli powder
• 1 to 2 tbsp – chipotle peppers, chopped (as per taste)
• 2 to 3 – cloves, minced
• 1 tsp – Molasses (optional)
• 1 can – diced/crushed Tomatoes (or you can blanch the Tomatoes, peel the skin and chop them)
• 1 tbsp – Tomato paste (optional)
• 1 tbsp – Sugar
• Salt to taste
• 1 cup – water/vegetable stock
Method:
- Heat oil in a pan and cook the onions, garlic and potatoes for 5-6 minutes.
- Add all the spices and cook further for another 3-4 minutes.
- Then add the rest of the ingredients – beans, tomatoes, paste, molasses and sugar along with 1 cup water/vegetable stock.
- Gently simmer for about 10-15 minutes and serve with sour cream or chips or with rice if it’s part of a meal.
