Ingredients:

• 8 – bread slices
• 1/2 cup – carrot, peeled and grated
• 1/2 cup – beetroot, peeled and grated
• For Green peas spread:
• 1 cup – cooked Green peas
• 2 tsp – chopped Garlic
• 2 tbsp – chopped Spring onions
• 1/2 tsp – cumin powder
• 1 tsp – minced Green chillies
• 1 tbsp – chopped Coriander leaves
• 1 tbsp – chopped Mint leaves
• 2 to 3 tbsp – low fat yogurt or cheese
• pepper to taste
• salt to taste

Method:

  1. Mash the peas and mix with rest of the ingredients.
  2. Spread the bread slices along with the peas mixture.
  3. Sandwich two slices with grated carrot and beet root.
  4. Make four sandwiches and cut each into two parts.
