Ingredients:

• 500 g – Fresh, tender Bottle Gourd (lauki)
• 100 g – Almonds, crushed coarsely
• 600 ml – Milk
• 1/2 cup – Sugar
• 1/2 tsp – Cardamom, powdered
• 10 to 12 strands – Saffron
• 1 tsp – Ghee.

Method:

  1. Wash and grate the bottle gourd. Then squeeze out the excess water.
  2. Add this to a microwave bowl along with 50 ml milk.
  3. Microwave on high for 6 minutes.
  4. Add almonds and 100 ml milk, now microwave it for 4 minutes.
  5. Meanwhile, boil the cooked gourd mixture in a heavy sauce pan.
  6. Cook over a medium-low flame, until the milk is fully absorbed.
  7. Now add sugar and cook until it melts, stirring gently.
  8. Cook until dry.
  9. Add cardamom, saffron, ghee and mix well to blend in the flavours.
  10. Serve warm or cold.
  11. Microwave for 7-8 seconds before serving.
