Ingredients:

• 2 cups – flour
• 1/2 cup – Sugar
• 1 pack – Yeast
• 1/2 cup – Milk
• 1/2 cup – margarine
• 3 – whole eggs
• 1 can – raisins, seedless
• 1/2 cup – brown sugar, boiled
• 1/3 cup – water, boiled
• 1/4 cup – rum, boiled

Method:

  1. Mix 3/4 cup flour and yeast.
  2. Mix milk and margarine in a sauce pan till warm and pour into a bowl.
  3. Add remaining dry ingredients and beat for 2 mins with an electric hand mixer.
  4. Add eggs one at a time and flour, little by little to make a thick batter.
  5. Then beat for an additional 2 mins.
  6. Cover and let the mix ferment, about double the size.
  7. Stir in raisins and turn out into a 2 quart greased tube pan.
  8. Let it rise uncovered for 30 mins.
  9. Bake at 350 degree Fahrenheit for 40 mins.
  10. Before removing from pan and while still hot from oven, prick with a fork and pour rum syrup over cake.
