Ingredients:

• 2 – long Brinjals (cut into small pieces)
• 3 to 4 – Potatoes (cut into small pieces)
• Oil – as needed
• 1 tsp – Cumin seeds
• 2 tsp – black Mustard Seeds
• 2 tsp – Turmeric powder
• 4 to 5 tbsps – cumin and coriander powder
• 1 tsp – Garam Masala powder
• 1 tsp – Ginger paste
• 1 tsp – Garlic paste
• 5 to 6 tbsp – besan (gram flour)
• 2 cups – Milk
• salt to taste

Method:

  1. Heat oil in pan and splutter cumin and mustard seeds.
  2. Add cut potatoes and brinjal pieces. Add turmeric, cumin-coriander powder, garam masala powder, ginger and garlic pastes and salt.
  3. Mix all the seasoning well with the potato and brinjal pieces.
  4. Add little oil if the mixture looks dry.
  5. After seasoning is mixed well with the potato and brinjal pieces, add besan and mix it well.
  6. You may add some more oil if needed.
  7. Add milk and cook till the potato and brinjal pieces turn soft.
  8. Serve this vegetable hot with fresh rotis.
