Ingredients:
• 500 gm – Chicken breast fillets
• For marinade:
• 1 small piece fresh ginger, grated
• 2 Cloves – garlic, crushed
• 8 tbsp – soy sauce
• 2 tbsp – groundnut oil
• 1 or 2 – Dried red chillies
• 1 tsp – ground Coriander seeds
• 1 tsp – Sugar
• For Peanut sauce:
• 1 Onion
• 1 or 2 Cloves Garlic
• 150 gm – crunchy Peanut Butter (approx)
• 150 ml – vegetable stock
• 100 ml – Coconut milk1 Lime
• soy sauce
• oil as required
• wooden skewers
Method:
- Finely chop the chillies and mix with the remaining marinade ingredients.
- Cut the chicken into thin strips, mix with the marinade and place in the fridge for 3 hours.
- Thread the marinated strips of chicken onto skewers in a zig-zag pattern and grill or bake in the oven for 5 minutes.
- To make peanut sauce:
- Finely chop the onion and fry gently with the crushed garlic until transparent.
- Stir in the peanut butter. Stock and boil until slightly reduced.
- Dilute with coconut milk until the desired consistency is obtained.
- Season to taste with soy sauce and lime juice.
