Ingredients:

• 500 gm – Chicken breast fillets
• For marinade:
• 1 small piece fresh ginger, grated
• 2 Cloves – garlic, crushed
• 8 tbsp – soy sauce
• 2 tbsp – groundnut oil
• 1 or 2 – Dried red chillies
• 1 tsp – ground Coriander seeds
• 1 tsp – Sugar
• For Peanut sauce:
• 1 Onion
• 1 or 2 Cloves Garlic
• 150 gm – crunchy Peanut Butter (approx)
• 150 ml – vegetable stock
• 100 ml – Coconut milk1 Lime
• soy sauce
• oil as required
• wooden skewers

Method:

  1. Finely chop the chillies and mix with the remaining marinade ingredients.
  2. Cut the chicken into thin strips, mix with the marinade and place in the fridge for 3 hours.
  3. Thread the marinated strips of chicken onto skewers in a zig-zag pattern and grill or bake in the oven for 5 minutes.
  4. To make peanut sauce:
  5. Finely chop the onion and fry gently with the crushed garlic until transparent.
  6. Stir in the peanut butter. Stock and boil until slightly reduced.
  7. Dilute with coconut milk until the desired consistency is obtained.
  8. Season to taste with soy sauce and lime juice.
