Ingredients:
• 1.5 cups – All-purpose flour
• 3/4 tsp – Baking soda
• 3/4 tsp – Baking powder
• 1/2 tsp – Ground Cinnamon
• 1/2 tsp – Ground Nutmeg
• 3/4 cup – Brown sugar
• 3/4 cup – Milk (boiled and cooled)
• 1/2 cup – Orange juice (freshly squeezed)
• 1/4 cup – Ghee
• 1/2 tsp – Vanilla extract
• 2 tsp – Lemon juice
• 1/4 cup – Raisin
• 1/2 cup – Carrot (grated)
• 1/2 tsp – Salt
Method:
- Pre-heat oven at 350 Fahrenheit.
- Grease 8 inch pan.
- Mix all the dry ingredients in a bowl.
- Combine ghee, vanilla extract, lemon juice, orange juice and milk in another bowl. Stir well to blend all the ingredients.
- Now, add this to the flour mixture. Blend until smooth. Stir in raisin and grated carrot.
- Pour the batter in to greased pan and bake for 30 minutes or till wooden pick inserted in centre comes out clean.
