Ingredients:
• 250 g – Peanuts
• 1/2 tsp – salt
• 1 tsp – water
• 1 sprig – Curry leaves (optional)
• 200 g – oil
• Spice powder:
• 3/4 tsp – Red Chilli powder or 1/2 tsp – Kashmiri Red Chilli powder
• 1/4 tsp – Hing (asafetida)
• 1/2 to 3/4 tsp – salt
• Mix all the spice ingredients together and keep aside.
Method:
- Mix peanuts with salt.
- Sprinkle 1 tsp water and mix well.
- Keep aside for 20 – 25 minutes.
- Heat oil in a frying pan. Reduce heat to medium and fry peanuts in batches (till golden colour). Drain and place on kitchen paper to absorb excess oil.
- After frying each batch of peanuts, mix spice powder (1/2 tsp for each batch) while the peanuts are still hot. Sprinkle deep fried curry leaves over it (optional). Serve with Tea / Coffee.
