
Ingredients:
• 1 cup – Ragi
• 1 cup – rolled oats
• 1/2 cup – All-purpose flour
• 1/2 cup – Persimmon puree
• 3 tbsp – Vegetable shortening
• 1/2 cup – Sugar
• 1 tsp – Baking powder
• 1/4 tsp – Baking soda
• 1/4 cup – Packed Brown sugar
• 3 tsp – Egg replacer powder + 4 tbsp – Warm water
• 1/4 cup – Raisins
• 1/4 cup – Milk
Method:
- Mix the egg replacer powder and warm water into a thick paste.
- Beat sugar, packed brown sugar and vegetable shortening until soft.
- Add the persimmon puree, baking powder, baking soda and raisins.
- Finally add the ragi flour, rolled oats and all-purpose flour with milk and knead into soft dough.
- Preheat the oven to 350 degrees F and place a baking sheet over a baking tray.
- Make small balls from the dough and flatten them with your palms. If they are sticky, just grease your palms.
- Place these cookies over the baking sheet, leave some spaces between them and bake for 25-30 minutes.
