Ingredients:

• 1 cup – Ragi
• 1 cup – rolled oats
• 1/2 cup – All-purpose flour
• 1/2 cup – Persimmon puree
• 3 tbsp – Vegetable shortening
• 1/2 cup – Sugar
• 1 tsp – Baking powder
• 1/4 tsp – Baking soda
• 1/4 cup – Packed Brown sugar
• 3 tsp – Egg replacer powder + 4 tbsp – Warm water
• 1/4 cup – Raisins
• 1/4 cup – Milk

Method:

  1. Mix the egg replacer powder and warm water into a thick paste.
  2. Beat sugar, packed brown sugar and vegetable shortening until soft.
  3. Add the persimmon puree, baking powder, baking soda and raisins.
  4. Finally add the ragi flour, rolled oats and all-purpose flour with milk and knead into soft dough.
  5. Preheat the oven to 350 degrees F and place a baking sheet over a baking tray.
  6. Make small balls from the dough and flatten them with your palms. If they are sticky, just grease your palms.
  7. Place these cookies over the baking sheet, leave some spaces between them and bake for 25-30 minutes.
